It seems that gluttony doesn't wait, so today we decided to take you to the Creperie Ty-Ouessant (Very good choice, isn't it?) It's run by Erwan, our first neighbour, and we like to say that he's the most Basque of Bretons! On the facade, it even claims its double homeland with the Gwenn ha Du and the Ikurriña!

Extérieur de la crêperie

Erwan is a hell of a guy, generous and whole, he is like his pancakes: he is unanimous!
And what we don't tell you is that all year round, we hear Bretons on vacation in the Basque Country envying its know-how! (Sorry, but he stays here!)

Recently, the Crêperie got a makeover! There is a neat and refined decor (just like the pancakes that are served there!). But also nods to the lands of Brittany so that the immersion of this taste journey is worthy of this know-how that is transmitted!

Erwan is the successor of a fine line of crepes where the family recipe for crepes has been generously passed down for several generations. But there is no question of revealing all its secrets to us! We will just enjoy the live realization of our pancakes of the day!

Do not hesitate to consult the map, there is no harm in doing good!

To console you, we invite you to learn more about Erwan by listening to the new episode of our podcast “the quarter of an hour bidartar”, and to solve this mystery: “Do we say crêpe or galette? »

He even gives us (part of) this coveted recipe! (how nice these Bretons are!!)

To sum up and it's good because it's you, Erwan gives you some tips for making your first Breton pancakes! Put on your apron and prepare the ingredients!

And even if the secret is well kept, we have found for you a very simple recipe to make in less than 30 minutes, for 6 persons ! You will need:

  • Step 1

In a bowl, put the flour and salt. Add the water gradually, stirring vigorously. Add the eggs and mix again.

  • Step 2

Let the dough rest for at least 1 hour. After an hour, add water if the paste is too thick.

  • Step 3

Butter your Billig with “a little” butter. Heat over medium/low heat. Pour a ladle of batter, form your pancake and cook for 1 to 2 minutes on each side. The 1st is often missed, it's normal!

  • Step 4

Then garnish as you wish (be creative) and enjoy!

This recipe will surely not be as good as Erwan's, but it's a good start!

So we can only recommend that you push the door of this generous address, after all...all work deserves its pancake! : )
